Authentic Indian Undhiyu Recipe: A Traditional Gujarati Delicacy
Undhiyu is a celebrated dish from the western Indian state of Gujarat, known for its rich flavors and seasonal ingredients. This winter delicacy is a mixed vegetable dish prepared with an aromatic blend of spices and slow-cooked to perfection. Ingredients for Undhiyu

Vegetables Required:
- 1 cup Surti papdi (broad beans)
- 1 cup green peas
- 1 cup small brinjals (eggplants)
- 1 raw banana, chopped
- 1 small sweet potato, diced
- 1 medium potato, diced
- 1/2 cup purple yam (ratalu), diced
- 1/2 cup methi (fenugreek) leaves, finely chopped
For Muthiya (Fenugreek Dumplings):
- 1 cup gram flour (besan)
- 1/2 cup chopped fenugreek leaves (methi)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 1 tablespoon oil
- Water as required
- Oil for frying
For the Masala Paste:
- 1 cup fresh coconut, grated
- 1/2 cup coriander leaves, chopped
- 2-3 green chilies
- 1 tablespoon sesame seeds
- 1 tablespoon peanuts, roasted
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 2 tablespoons oil
- Salt to taste
- Juice of 1 lemon
- 1 teaspoon sugar
Step-by-Step Preparation
Step 1: Preparing the Muthiya
- In a mixing bowl, combine gram flour, chopped fenugreek leaves, turmeric powder, red chili powder, cumin seeds, salt, sugar, and oil.
- Add water little by little and knead into a firm dough.
- Shape the dough into small cylindrical dumplings.
- Heat oil in a pan and deep-fry the dumplings until golden brown.
- Remove and keep them aside for later use.
Step 2: Making the Masala Paste
- In a blender, add coconut, coriander leaves, green chilies, sesame seeds, peanuts, ginger, garlic, cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, salt, lemon juice, sugar, and 2 tablespoons oil.
- Blend into a coarse paste. This paste is the heart of the dish and will bring all the flavors together.
Step 3: Preparing the Vegetables
- Wash and chop all the vegetables as required.
- Slit the brinjals, raw banana, and potatoes slightly, keeping them whole but allowing the masala to be stuffed inside.
- Stuff the prepared masala paste into the slit vegetables and keep aside.
Step 4: Cooking Undhiyu
- Heat 3-4 tablespoons of oil in a thick-bottomed pan or earthen pot.
- Add the remaining masala paste and sauté for a few minutes until aromatic.
- Add Surti papdi and green peas, followed by stuffed vegetables.
- Sprinkle a little water, cover, and cook on low flame for about 30-40 minutes.
- Stir occasionally, making sure the vegetables cook evenly and do not stick to the bottom.
- Once the vegetables are tender, add the fried muthiya dumplings and mix gently.
- Let it cook for another 10 minutes, allowing the flavors to blend.
- Turn off the heat and garnish with freshly chopped coriander leaves and grated coconut.
Serving Suggestions
Undhiyu is best enjoyed with hot puris or soft phulkas. It can also be paired with steamed rice and Gujarati kadhi for a wholesome meal. Traditionally, it is served with shrikhand (a sweet yogurt dish) to balance the spiciness of the dish.
