Ingredients

For the Cake Layers:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter (softened)
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1/2 cup finely ground almonds

For the Almond Frosting:

  • 1 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon almond extract
  • 1/2 teaspoon cardamom powder (optional, for a hint of spice)

For the Almond Praline (Optional):

  • 1/2 cup sugar
  • 1/4 cup water
  • 1/2 cup sliced almonds

For Garnish:

  • Sliced almonds or silvered almonds
  • Edible silver leaf (optional)

Instructions

Step 1: Prepare the Cake Batter

1.     Preheat your oven to 350°F (175°C). Grease and line four 8-inch round cake pans with parchment paper.

2.     In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

3.     In a large bowl, beat the softened butter and sugar until light and fluffy using an electric mixer (about 2-3 minutes).

4.     Add the eggs one at a time, beating well after each addition. Stir in the almond and vanilla extracts.

5.     Gradually add the dry ingredients to the butter mixture, alternating with buttermilk, beginning and ending with the dry ingredients. Mix until just combined.

6.     Fold in the finely ground almonds for added texture and flavor.

Step 2: Bake the Cake Layers

1.     Divide the batter evenly among the prepared cake pans, smoothing the tops with a spatula.

2.     Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.

3.     Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Step 3: Make the Almond Frosting

1.     In a large bowl, beat the softened butter until creamy.

2.     Gradually add powdered sugar, one cup at a time, mixing on low speed until incorporated.

3.     Stir in the almond extract and cardamom powder if using.

4.     Slowly add the heavy cream, beating on high speed until the frosting is light and fluffy.

Step 4: Prepare the Almond Praline (Optional)

1.     Line a baking sheet with parchment paper.

2.     In a small saucepan, combine the sugar and water over medium heat. Cook until the sugar dissolves and turns a golden caramel color.

3.     Quickly stir in the sliced almonds and pour the mixture onto the prepared baking sheet. Spread it out evenly and let it cool completely.

4.     Once hardened, break the praline into small pieces.

Step 5: Assemble the Cake

1.     Place the first cake layer on a serving plate or cake stand. Spread a generous layer of almond frosting on top.

2.     Repeat with the second and third layers, adding frosting between each layer.

3.     Place the final cake layer on top and frost the entire cake with a thin crumb coat. Refrigerate for 30 minutes to set.

4.     Apply a second, thicker layer of frosting, smoothing it out with a spatula.

Step 6: Decorate and Serve

1.     Garnish the cake with sliced almonds or slivered almonds around the sides and on top.

2.     Add pieces of almond praline and edible silver leaf for an elegant finish.

3.     Slice and serve your Indian Almond Cake with a cup of masala chai or coffee for the perfect pairing.

Tips for Success

1.     Room Temperature Ingredients: Ensure all your ingredients are at room temperature for a smoother batter and better rise.

2.     Even Layers: Use a kitchen scale to evenly divide the batter for uniform cake layers.

3.     Customize Flavors: Add a pinch of saffron or a dash of rose water for an authentic Indian twist.

4.     Make Ahead: Bake the cake layers a day in advance and store them in an airtight container. Assemble and frost the cake on the day of serving.

5.     Storage: Store the assembled cake in the refrigerator for up to 3 days. Bring to room temperature before serving.
