Ingredients
For the Beef Marinade:
500g beef (cut into bite-sized chunks)
1 cup plain yogurt
1 tablespoon ginger-garlic paste
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon cumin powder
1 teaspoon coriander powder
Salt to taste
2 tablespoons lemon juice
For the Rice:
2 cups basmati rice
4 cups water
1 teaspoon salt
1 bay leaf
4-5 cloves
2 cardamom pods
1 small cinnamon stick
For the Biryani Base:
2 large onions, thinly sliced
2 large tomatoes, finely chopped
½ cup fresh mint leaves, chopped
½ cup fresh coriander leaves, chopped
2 green chilies, slit lengthwise
¼ cup cooking oil or ghee
1 teaspoon garam masala
½ cup fried onions (store-bought or homemade)
For Assembling:
A pinch of saffron threads soaked in 2 tablespoons of warm milk (optional)
2 tablespoons melted ghee
A handful of cashews and raisins (optional)
Instructions
1. Marinate the Beef
Marinating the beef is crucial for tender, flavorful meat. In a large bowl, mix all the marinade ingredients. Add the beef pieces, ensuring each piece is well-coated. Cover and refrigerate for at least 2 hours or overnight for best results.
2. Prepare the Rice
Rinse the basmati rice in cold water until the water runs clear. Soak the rice for 30 minutes, then drain.
In a large pot, bring 4 cups of water to a boil. Add salt, bay leaf, cloves, cardamom, and cinnamon stick. Stir in the soaked rice and cook until the rice is 70% done (grains should still have a bite). Drain the rice and set it aside.
3. Cook the Beef
Heat the oil or ghee in a deep pot over medium heat. Add the sliced onions and sauté until golden brown. Add the chopped tomatoes and cook until they turn soft and oil starts to separate.
Add the marinated beef along with its juices. Cook on medium heat until the beef is tender and the sauce thickens. This should take about 30-40 minutes. Stir occasionally and add a splash of water if needed to prevent sticking.
Once the beef is cooked, mix in the chopped mint, coriander, green chilies, and garam masala. Stir well and turn off the heat.
4. Assemble the Biryani
In a large, heavy-bottomed pot, layer the biryani:
Start with a layer of cooked beef.
Add a layer of partially cooked rice.
Sprinkle some fried onions, chopped coriander, and mint over the rice.
Drizzle a few drops of saffron milk and melted ghee for added aroma and color.
Repeat the layers until all the beef and rice are used, ending with a rice layer on top.
5. Dum Cooking (Steaming)
Cover the pot with a tight-fitting lid. If your lid isn’t snug, seal the edges with dough or aluminum foil to trap the steam. Place the pot over low heat and cook for 20-25 minutes. This process, known as “dum,” allows the flavors to meld together beautifully.
6. Garnish and Serve
In a small pan, lightly fry the cashews and raisins in ghee until golden. Sprinkle them over the biryani before serving.
Gently fluff the biryani with a fork to mix the layers slightly. Serve hot with raita, salad, or a side of your choice.
