  • 2-3 green chilies, slit
  • 1 tbsp ginger-garlic paste
  • ½ cup yogurt (curd)

Spices:

  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 2 tsp coriander powder
  • 1 tsp garam masala
  • 1 tsp biryani masala (optional)
  • A few strands of saffron soaked in 2 tbsp warm milk

For Layering and Garnish:

  • A handful of fried onions (optional)
  • 2 tbsp fresh mint leaves, chopped
  • 2 tbsp fresh coriander leaves, chopped
  • 2 tbsp cashews, fried (optional)

Instructions:

1.     Cook the Rice:

o    Rinse the basmati rice in cold water until the water runs clear.

o    In a large pot, boil water with bay leaf, cloves, cardamoms, cinnamon, and salt.

o    Add the rice and cook until 70% done (the grains should still be slightly firm).

o    Drain the rice and set aside.

2.     Prepare the Vegetables:

o    Heat oil or ghee in a large pan.

o    Add cumin seeds and let them splutter.

o    Sauté the onions until golden brown, then add green chilies and ginger-garlic paste. Cook until the raw aroma disappears.

o    Stir in the chopped tomatoes and cook until they become soft and pulpy.

o    Add turmeric, red chili powder, coriander powder, and garam masala. Mix well.

o    Add the mixed vegetables and sauté for 5-7 minutes.

o    Lower the heat and mix in the yogurt. Cook until the vegetables are tender and coated with the spices.

3.     Layer the Biryani:

o    In a heavy-bottomed pot or a large baking dish, layer half the cooked rice.

o    Spread the vegetable mixture evenly over the rice.

o    Add a layer of the remaining rice on top.

o    Drizzle the saffron milk over the rice and sprinkle mint and coriander leaves.

o    Garnish with fried onions and cashews if desired.

4.     Cook the Biryani:

o    Cover the pot tightly with a lid or aluminum foil to seal in the steam.

o    Cook on low heat (dum cooking) for 20-25 minutes, allowing the flavors to meld together.

o    Alternatively, bake the biryani in a preheated oven at 180°C (350°F) for 20 minutes.

5.     Serve and Enjoy:

o    Gently fluff the biryani with a fork before serving to mix the layers without breaking the grains.

o    Serve hot with raita, salad, or pickle on the side.
