Cheese Mutton Kababs are a mouthwatering fusion of tender mutton, rich cheese, and aromatic spices. These kababs are perfect as an appetizer or a side dish, and they never fail to impress guests at gatherings or family dinners. Ingredients

For the Mutton Mixture:

  • 500 grams minced mutton (preferably with some fat)
  • 1 large onion, finely chopped
  • 2 tablespoons ginger-garlic paste
  • 2 green chilies, finely chopped
  • 1/4 cup fresh coriander leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1 tablespoon garam masala powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • 1/2 teaspoon black pepper powder
  • 1/4 teaspoon turmeric powder
  • 1 egg (for binding)
  • 2 tablespoons breadcrumbs (adjust as needed)

For the Cheese Filling:

  • 100 grams mozzarella cheese, grated
  • 50 grams cheddar cheese, grated
  • 1 teaspoon mixed Italian herbs (optional)

For Coating and Frying:

  • 1 cup breadcrumbs
  • 1 egg, beaten
  • Oil for shallow frying

Instruction

Step 1: Prepare the Mutton Mixture

1.     In a large mixing bowl, add minced mutton, chopped onions, ginger-garlic paste, green chilies, coriander, and mint leaves.

2.     Add garam masala, red chili powder, cumin powder, coriander powder, salt, black pepper, and turmeric powder.

3.     Crack in the egg and mix well. Gradually add breadcrumbs to achieve a firm, non-sticky texture.

4.     Knead the mixture thoroughly for about 5 minutes to ensure all ingredients are well combined.

5.     Cover the bowl and refrigerate the mixture for 30 minutes. This helps in binding and enhances flavor.

Step 2: Prepare the Cheese Filling

1.     In a separate bowl, mix mozzarella and cheddar cheese.

2.     Add mixed Italian herbs (if using) and set aside.

Step 3: Shape and Stuff the Kababs

1.     Take a small portion of the mutton mixture (about the size of a golf ball).

2.     Flatten it on your palm to form a round patty.

3.     Place a spoonful of the cheese mixture in the center and carefully seal the edges, forming a smooth, round kabab.

4.     Repeat the process for the remaining mixture and cheese.

Step 4: Coat the Kababs

1.     Dip each stuffed kabab in the beaten egg, ensuring it’s fully coated.

2.     Roll it in breadcrumbs for a crisp, golden finish.

3.     Repeat for all kababs and place them on a plate.

Step 5: Fry the Kababs

1.     Heat oil in a shallow frying pan over medium heat.

2.     Once the oil is hot, place the kababs gently in the pan.

3.     Fry in batches to avoid overcrowding, cooking each side for 3-4 minutes or until golden brown and cooked through.

4.     Remove and place on paper towels to absorb excess oil.
